and loaded (hot and cold) into A la Cart retherm serving carts
- Carts are transported to serving area and docked
to controller chiller unit
- System II "Boost Mode"
retherms
and chills carts for 15-20 minutes to reheat food to desired temperature
- Cold food (salads, etc.) is cooled while hot
food is heated
